The Green Goddess Gardening 101

Weed Prevention: Weeds start to grow quickly. The weeds are more easily controlled at this stage. Continue spring planting. Now is the time to plant for summer. Check your irrigation system. Remember that everything needs water and fertilizer.

Plant beets in the vegetable garden. Also, plant bush beans, cantaloupes, corn, eggplants, radishes, and tomatoes.

Featured Recipe

Bell Pepper Nachos:

This recipe is a delicious appetizer or main dish for two. It’s super easy to make and tastes great.

Ingredients for 21 tsp avocado or olive oil

Half a red onion (diced).

1 lb. Organic Ground Turkey

1 cup cooked quinoa

Pinto Beans, 1/2 Can

Two orange bell peppers

Red bell peppers 2

SeasoningCumin – 1/2 tsp

1/2 tsp smoked paprika

Half a teaspoon of garlic powder

1/4 teaspoon salt

1/4 tsp Pepper

ToppingsAvocado

Cilantro

Mexican cheese

Directions:

Pre-heat oven to 375 degrees

Heat a pan on medium heat. Add avocado oil and red onions, and sauté for 5 minutes.

Add all the seasonings and cook for 7 minutes.

Stir together cooked quinoa, pinto beans, and quinoa.

As the turkey cooks, place bell peppers on a cookie sheet.

Spread cheese over each “chip” of bell pepper.

Place in the oven for 10 to 15 minutes or until tender. Enjoy! Top with chopped avocado and cilantro, if you wish.
